The stick bread is:

vegan, palm oil free 
and sugar free

Baking instructions stick bread

It's so easy to bake bread on a stick:

  1. Pour the baking mixture into a bowl, add 450 ml of lukewarm water (see water line in the can) and mix the dough with your hand
    Knead in the food processor or with the Thermomix for about 3 minutes.
  2. Cover and leave the dough to rest in the bowl at room temperature (approx. 24 ° C) for approx. 30 - 60 minutes.
  3. 6 bread rolls: Knead the dough briefly on a well-floured work surface. Then divide into 6 equal pieces. Shape each piece of dough into an approx. 40 cm long roll. Wrap the dough roll in a spiral around each pointed stick end and gently press together at the end,
    so that the stick bread cannot slip off the stick when grilling.
    4 baguettes: Knead the dough briefly on a well-floured work surface, divide it into 4 roughly equal pieces and shape it into the desired elongated shape (approx. 20 cm). Alternatively, 2 large baguettes (approx. 35 cm) can be formed.
  4. Cover again for 30 - 60 minutes at room temperature and let rest for 30 - 60 minutes. Preheat the oven (top-bottom heat) or grill to 230 ° C.
  5. Use a sharp knife to cut the top of the baguettes several times.
  6. Brush or spray the baguettes with a little lukewarm water.

 

Grill:
Baguettes: Place on the wire rack at 230 ° C - indirect heat, close the lid, close the ventilation slides and bake for about 20 minutes.
Stick bread: Hold the branch about 20 cm above the embers and turn slowly until the stick bread is golden brown. Grill the bread for about 10-15 minutes, turning and turning several times so that it browns and cooks evenly.

Baguettes in the oven:
Place the baguettes on a baking sheet lined with baking paper.
4 baguettes: bake at 230 ° C for 17-20 minutes.
2 baguettes: bake at 230 ° C for 10 minutes, then reduce to 190 ° C and bake for another 15 minutes.

You still need:

450 ml water, 6 plugs

Tips:

Since the dough is a bit sticky, we recommend flouring your hands and the work surface for shaping the grilled bread and shaping the grilled bread quickly.
