Baking instructions for organic spelled bread with organic wild herbs

It's so easy to bake 0,5 kg organic spelled bread with organic wild herbs:

  1. Put the baking mixture in a bowl, add 220 ml water (see water line on the tin) and knead the dough by hand, with the food processor or with the Thermomix for about 3 minutes.
  2. Cover and let the dough rest in a warm place (~ 30 ° C) for about 24 minutes.
  3. Knead the dough on a floured work surface and shape it into your desired shape (roll or bread). Then place on a baking sheet lined with baking paper.
  4. Cover the dough and let it rest in a warm place for 1-2 hours.
  5. Preheat the oven to 220 ° C (for rolls) or 230 ° C (for bread).
  6. Use a sharp knife to cut into the top of the dough (3 cross sections or diamond shape).
  7. Brush or sprinkle the dough with a little water.
  8. Alarm clock: Bake at 220 ° C hot air for about 12 minutes. Then remove from the baking sheet and let cool for 10 minutes
  9. Bread: Bake at 230 ° C top and bottom heat for 10 minutes, then switch down to 190 ° C and bake for another 20 minutes. Then remove from the baking sheet and let cool for 10 minutes.

You still need:

220 ml water

Tips:

Tip 1: To make the bread crispier, also wet the baking paper with water!
Tip 2: Sprinkle the rolls with oat flakes or sesame seeds, depending on your taste!
Tip 3: As soon as the bottom of the bread turns brown, the pastry is ready.
