What makes spelled flour so special
Spelled flour is probably the best-known among the ancient grains. It is therefore only logical that this type of flour is also produced in our mill.
In contrast to wheat, there is a well-known distinguishing feature.
The spelled grain is not exposed after harvesting, as is the case with wheat grain. Instead, the "Triticum Spelta" (spelled) is wrapped in a robust protective cover, the spelled. This is where the term husk grain comes from. This type of grain can also thrive optimally in the Waldviertel and that is the reason why we mainly get it from there.
Origin and age
According to historical records, this type of grain was first grown in Egypt around 8000 years ago. Due to the great migration of peoples, she finally came to Central and Northern Europe.
The elaborate processing of the spelled grain
In a special process called “tanning”, the grain is carefully peeled out of the husk after harvest. Only then can it be processed further. This is probably also the reason why many millers still prefer the less time-consuming wheat flour in terms of production.
Its healing powers
Anyone who is highly sensitive to gluten should be very happy about this type of flour.
Since the spelled grain is hardly grown any further, the protein or gluten structure remains almost unchanged. This fact ensures better tolerability and when eating spelled bread or spelled biscuits, those affected have significantly fewer complaints.
Compared to wheat, spelled flour also provides even more trace elements and minerals. The proportion of silica is also much larger and this has a positive effect on the growth of hair and fingernails.
In addition, when you enjoy our Fredi spelled flour, you get an extra portion of the feel-good hormone serotonin. This is why this type of cereal is also generally known as a "mood enhancer".
Pastor Sebastian Kneipp even discovered the grain as a substitute for coffee, because he roasted it. You can still get delicious spelled coffee in specialty shops today. This husk grain is therefore very versatile.
Fields of application
Stöbers spelled flour is particularly suitable for the preparation of fine pastries, such as pies and cakes made from biscuit, sand or yeast dough. Biscuits, strudel variants, waffles or sweet crêpes also give spelled flour a fine aroma. On top of that, breads, spaetzle and dumplings made from spelled flour are particularly tasty.

So that all dishes turn out perfectly, please note the special baking properties of spelled flour: Due to the greater swelling capacity, a little more liquid is required. In addition, dough made from spelled flour needs a little more time to rest.
